Sambusak is a distinctive Jerusalem bakery and patisserie chain specializing in stone-oven baking, using a unique, purpose-built masonry oven.
For over 33 years, Sambusak has been renowned for its delicious pastries and welcoming atmosphere.
The bakery’s name has nostalgic roots dating back to the late 1980s, when Jerusalem’s youth would regularly gather every Friday at a popular spot in the Old City known as “by the Sheikh” to enjoy watermelon, malabi, sachlab, and Jerusalem bagels.
When the First Intifada prevented further gatherings at that location, the idea emerged to bring the spirit of “the Sheikh” to West Jerusalem.
In 1990, a young entrepreneur named Shay Naor opened the first Sambusak branch on Tzeret Street in Jerusalem’s Talpiot industrial zone, quickly turning it into a beloved local hangout and the city’s first eatery operating 24 hours a day.
In 2003, the branch moved to HaOman Street to expand and add a full patisserie, responding to rising demand for its unique pastries and dishes.
This popularity has since led to the opening of additional branches throughout Jerusalem and beyond.
